Joseph and Lovina are eating a grilled cheese sandwich for lunch. They like to eat their meal at the little table and chairs that we have just for them. Meanwhile, 7-month-old Kevin is on the floor playing with his toys. His favorite right now is a teether toy. I had him to the doctor this week for a check-up and he weighs 19 pounds and is more than 27 inches long. None of my other children weighed that much before a year old. I am glad he's healthy. Kevin is such a happy baby, always laughing at things the children do.
Next week the school children will be home on spring break. I hope the weather will stay this warm. Right now it is 71 degrees but it is windy. It was raining this morning for quite awhile.
Jacob and Emma's 6-year-old, Jacob, had the misfortune of fracturing his wrist at school during recess. He has a hard cast on it. Sure hope it'll heal quickly. He is in kindergarten so it's a good thing it was his left wrist. I remember how miserable my Loretta was when she broke her arm.
The children have only one more quarter of school left for this term. Time goes by so fast. I spent a couple of hours at the school last night for parent-teacher conferences. When you have five children it takes a little time to meet with all teachers,

There was a delay in getting our building permit for our new home but we should have it within the next couple of days now. We plan to start as soon as it comes. We are beginning later than we had planned but maybe we'll have nicer weather this way. I imagine with the spring rains I'll have my share of mud dragged into the house. But that just goes with the territory of having a new building under construction. I'll have to have my rhubarb, winter onions and some asparagus moved to make room for the new house. Our new house will be a two story with a full basement. The basement will have a walk-out towards the east. I will probably do my laundry down there. We also plan to have church services in the basement, rather than in the pole barn. Joe won't have so many things to move that way. It looks like an endless job ahead but we'll take it one day at a time.
My sister Susan found some dandelion greens which they had for supper. Now that is making me a little hungry for them. If the wind dies down I'll probably go look for some. It looks like it could blow up a storm. I'm glad we cleared away most of the buildings we tore down.
Try this recipe for dandelion green salad. You want to pick the greens when they are young and tender, so now is a good time to try it:
DANDELION GREEN SALAD
1 tbsp. vegetable oil
1 tsp. cider vinegar or lemon juice
2 cups young dandelion leaves
1/4 cup sliced green onions
2 hard-cooked eggs, sliced
In a small bowl, whisk oil and vinegar. Combine dandelion leaves and onions; add dressing and toss to coat. Arrange on two salad plates; top with eggs. Yields two servings.
