6:30 a.m. Sister Emma and I are preparing breakfast now. It will be nice to eat breakfast together. Emma, her husband Jacob, and their four children came over last night to assist us with work around here. Since they were planning to be here today to help again, I told them to stay overnight. So last night was a full house as all slept here. We are in the process of tearing down some older out-buildings on our property to make way for our new house. Our plans are to build a new house behind the one we live in now this summer. But these buildings have to be cleared away first to get ready to have a basement dug.
7 a.m. Breakfast is almost ready to serve. We are waiting for the menfolk to come in to eat. Joe, Jacob, and the four boys all went out as soon as daylight arrived to start cutting up a big tree that Joe chopped down last night. It was a large maple tree and the sap was really running out. This tree was also in the way of the new house, so it had to be taken down.
7:30 a.m. Sisters Verena and Susan walked down here to have breakfast with us and pitch in with the work today. They assisted us last night also, but decided to go home to sleep. Our breakfast menu consisted of fried eggs and potatoes, bacon, Swiss and Colby cheese, toast, hot peppers, bananas, oatmeal pie, homemade cinnamon rolls, milk, grape juice, coffee, and tea.
8:15 am. The men and boys have gone back outside to continue on the tree. The women and girls all pitch in and get the dishes washed, floors swept, and beds made while the men are outside.
9:15 a.m. Verena and Susan and the girls go outside to help pull branches from the tree to the fire and help carry wood away. Emma and I gather laundry and wash it. We hang it all outside and it looks like it will dry nicely today. After we're done we join in helping the rest. We carry boards from the old buildings to burn.
12 p.m. Lunch time already! I set out ham, cheese, and bread for sandwiches, hard-boiled eggs and horseradish, pickles, lettuce, chips. We just eat sandwiches for lunch but will make a bigger supper.
12:30 p.m. Everyone is back to work. Things are really getting cleared out to make way for the basement to be dug.
3 p.m. Everyone came in for a snack and I fix a pizza casserole to put into the oven so that everyone can eat supper before heading home. Then I go outside to get the laundry in. It all dried nicely.
4 p.m. Verena, Susan, and Emma come in and sweep and mop my floors. Sure refreshes everything. We get the rest of our supper ready.
4:45 p.m. Time to eat and call it a day. We have everything cleared away where the new house will be built. We have an old corncrib building out by the road that still needs to be picked up. But we will call it quits for today, though. Everyone must be tired as much as we accomplished today. We all eat supper and then everyone gets ready to go home.
5:45 p.m. Everyone has left for home and I give the younger children their baths while Joe does the evening chores. After being outside all day the children are really dirty,
8 p.m. Everyone has cleaned up and we're all ready to go to bed early. We sure appreciated all the good help we had today
Here is the recipe for pizza casserole that we served. Everyone enjoyed it!
EASY PIZZA CASSEROLE
8 ounces of cooked noodles
1 pound of browned hamburger
1 cup diced onions
1 cup fresh sour cream
1 cup homemade or store bought pizza sauce
1 cup homemade or store bought cottage cheese
1 cup diced or shredded Colby cheese for topping
Cook noodles and brown hamburger. Pour into 9 x 13 inch baking dish. Add onion, sour cream, pizza sauce and cottage. Stir well so everything is mixed together. Top with cheese and bake at 350 for 60 minutes or until cheese is golden and bubbly.
